You love burgers with fries, but want to try a healthier alternative? Of course, our low-carb Cauliflower-balls with bean fries as a side dish can in no way replace a real burger with fries. But is it so reprehensible if you just try a new interpretation of the dish? Which, by the way, can also score points with its healthy nutritional values. At the end of the day, dessert will surely still be inside...


for 15 Cauliflower-balls

Cauliflower balls

  • 1 cauliflower head
  • 50 g quinoa (dry)
  • Vegetable broth
  • 400 g quark or soy sauce (vegan)
  • 3 tbsp wheat flour or corn flour
  • 2 tbsp oats
  • Salt and pepper
  • Nutmeg
  • 1 handful chives 
  • 1 handful parsley
  • 70 g flour for breading
  • 2 eggs (vegan possible with batter) 
  • Vegetable oil

Bean fries:

for 4 portions

  • 500 g green beans
  • 4 tbsp olive oil
  • 3 tbsp VEGGIE CRUMBZ
  • 1 1/2 teaspoon coarse sea salt 
  • 1/2 teaspoon savory
  • 1/4 teaspoon ground black pepper


  • 5 tbsp quark or vegan quark
  • 1/2 teaspoon lemon zest
  • Salt, pepper
  • Chiliflakes


1. First put on your apron, wash your hands and put on your favorite music

2. Cook the quinoa with vegetable broth according to the package insert and finely chop the cauliflower (also works great in a food processor). Add the cottage cheese, flour, herbs, and quinoa and oatmeal. Season everything well with salt, pepper, vegetable stock and some nutmeg. Depending on the consistency, you can add a little more flour and a few more oats. Now let the dough rise really well - we'll take care of the beans for now.

3. Preheat the oven to 170 degrees convection. Wash the green beans thoroughly and cut off the ends. Now the green beans are briefly blanched in boiling water for 3-5 minutes. Add the oil, spices and VEGGIE CRUMBZ. Transfer to a baking sheet lined with parchment paper and place in the oven for 10-15 minutes.

4. Back to the meatballs! In order to be able to form the meatballs, you should have a well-sticky dough that is not too runny when forming so that it runs. It's going to be crunchy! Bread the formed meatballs in flour, the beaten eggs and the VEGGIE CRUMBZ.

5. Now heat fat in a pan and fry the Cauliflower thalers on both sides until the desired brown color. You can place them on paper towels for a few minutes to cool.

6. Almost there! Only the dip is missing. Take a nice bowl and put all the ingredients together - season properly and you're done
